Preheat the oven to 175°C (350°F). Brush an oven dish with a little oil.
Peel and cut the onions into wedges, then place them in the dish together with the spinach.
Sear the chicken in a little oil until golden brown. Season with salt and pepper. Place the chicken in the oven dish on top of the onions and spinach.
Sauce: Mix together all the sauce ingredients. Taste and adjust with salt and pepper. Tip: Start with a smaller amount of sambal and curry, taste, and add more to your preference.
Pour the sauce over the chicken and bake in the middle of the oven for about 40 minutes. Serve with rice and fresh spinach.
