French Potato Salad with Mustard and Herbs

Ingredients

  • 600 g new potatoes
  • 2 tbsp white wine vinegar
  • 4 tbsp olive oil
  • 1 clove garlic
  • 1 tbsp light French mustard
  • White pepper
  • Salt
  • 1/2 bunch fresh parsley, 3 tbsp, finely chopped
  • 1/2 bunch fresh chives, 3 tbsp, chopped
  • 2 tbsp capers

Instructions

Boil the potatoes and let them cool. Cut them into larger pieces.
Mix the dressing. Pour the dressing over the potatoes and stir very gently to avoid breaking them. Add the herbs and capers.
Chill the potato salad for about half an hour before serving.
