  • 1 x 1.2kg side of salmon, skin off, pin-boned
  • 2 large eggs
  • 1 teaspoon sweet smoked paprika
  • 400g wholemeal bread
  • 60g Cheddar cheese
  • extra virgin olive oil

Instructions

To make salmon fish fingers, simply cut 10 portions of salmon into 120g pieces. In a shallow bowl, whisk together two eggs, a pinch of sea salt and black pepper, and paprika. Tear up bread and process it in a food processor with cheese and two tablespoons of oil to make breadcrumbs. Spread the breadcrumbs on a tray.

Dip each piece of salmon into the egg mixture, then coat it in the breadcrumbs. Place the fish fingers onto a lined tray, layering with greaseproof paper between them until all are coated. You can cook them right away or freeze them for later. Just place them on a roasting tray and bake in a preheated oven at 200°C/400°F/gas 6 for 15 minutes from fresh, or 20 minutes from frozen, until golden and cooked through.
